    Friday’s Malt Chocolate Cake!!

    Do you have a favorite spot to go after an event to just have dessert? I do–mine is T.G.I. Fridays. They have the best selection of dessert as well as my favorite! The Malt cake is amazing! So I thought for today’s recipe I would get myself in the craving mood–and give it to you!

    Malt Frosting (Make First)

    Beat 1 pint of whipping cream and 1 1/4 Cup malted milk powder for 2 minutes, until stiff. Refrigerate 30 minutes.

    Melt 1 12 oz package of Semi-sweet chocolate chips in a saucepan over low heat. Stir constantly. When melted-set it aside to cool. Meanwhile, in a separate bowl, whip 1/3 Cup of sugar, 4 oz softened Cream Cheese and 1 tsp vanilla extract until creamy. Add melted chocolate and beat for 1 minute. Gradually add the malted milk mixture and mix until creamy. Chill for 2 hours before frosting the cake.

    Cake

    1 1/4 Cup of Oil
    2/3 Cup of Milk
    2/3 Cup of Plain Yogurt
    2 Eggs
    1 TB Vanilla Extract
    3 Cups Sugar
    3 Cups Flour
    1 Cup Unsweetened Cocoa Powder
    1 1/2 TB Baking Soda
    1/4 tsp Salt
    1 1/4 Cup Boiling Water

    Beat oil, milk, yogurt, eggs and vanilla until well blended. Sift together dry ingredients in a separate bowl. Slowly add 1/3 of the dry ingredients to the milk mixture and beat until blended. Add 1/3 Cup of the boiling water and beat. Add 1/3 more of the dry ingredients followed by another 1/3 Cup of the boiling water and beat. Scraping the sides of the bowl add remaining dry ingredients, beat, add the rest of the boiling water.

    In three 9 inch round cake pans (buttered and floured) divide batter evenly. Bake in oven at 300 degrees for 50 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.

    Frost the first layer of cake with a portion of the malt frosting. Add middle layer and frost. Add top layer and frost top and sides completely. Chill for up to 2 hours before cutting.
