    Pomegranates!!

    Today I shucked Pomegranate. I’m not sure if that’s what you call it–but it’s when you open up the skin of the pomegranate and remove all of the little seeded juice packets.

    You have to get the fruit out really carefully–and there is a really easy way to do it. You score the skin, and then put the fruit under water and break the skin apart. Then there are membranes that help make up the sections holding the seeds. You break them all apart under the water–I use a colander submerged in a bowl of water. As you break the fruit free, it sinks and the membranes float. The only time one doesn’t float–is if it is still attached to a piece of fruit.

    After you’ve cleaned them all out–and skimmed the top of the water to get rid of the skin and stuff–you pull the colander holding the seeds out and dump them out on a paper towel to dry. Once they are dry, you can put them in a tuperware container in the refrigerator.

    I use the seeds as a topping for salad. It’s just a crisp, sweet juice –and it adds so much to an ordinary salad. Another yummy use, sprinkled over cottage cheese. I love jam mixed into cottage cheese, and this is just as yummy. But my favorite use…sprinkled over vanilla ice cream! That right there is HEAVEN!!

    So tonight for dessert we will be having vanilla ice cream for dessert with pomegranate over the top!

      Try them–they are so good! Fruity and Fiber!! I should have mentioned these are probably not good for folks with ‘diverticulitis’–in fact, I’m sure they are REALLY BAD for them!
