Tacos!!

I remember when I was younger Tacos for dinner seemed like an awful lot of work! Cutting tomatoes, cutting the lettuce, grating the cheese. To me, in these days of pre-grated cheese, and bags of salad–tacos are about the easiest, tastiest dinner I can provide!
Last night was taco night, and honestly–I only had to cut up the tomatoes and the avocado. Normally I buy a light guac to put over the top–but avocados were on sale–and they beat out guac any day.
This is one of my kids favorite meals. Especially when it’s just a normal salad turned into a Taco Salad. My kids are Salad Bar fanatics anyways, but throw tacos into the salad, and they are big fans!

I love tacos! I don’t make them very often because it’s just me, and they leave me with more leftovers than I can stand to eat tacos in a row… but they’re quick, easy and delicious! Can’t beat that
