Kids Create: After School Snack!!
By The Chef | March 27, 2007
I’m always looking for fun snack ideas that the kids can make themselves. Why? Because it gives me a break–but the biggest reason is: The very best way to build a child’s self confidence is to give them tasks that they see as “grown up” and in their ability to accomplish that task–their confidence is built. So they look at feeding themselves something that they made as a “grown-up” job–and they have a lot of fun making it too!!
Here is a darling after school snack–easy to make–even easier to EAT!!
Rabbit-Out-of-the-Hat Salad
Hippity-hop to the salad stop. Youll find sweet pear bunnies dressed in their finest!
Yield: 8 servings
8 lettuce leaves
8 chilled canned pear halves
16 raisins
8 red cinnamon candies
16 sliced almonds
1 cup cottage cheese
Place 1 lettuce leaf on each salad plate. Place 1 pear half, cut side down, on each lettuce leaf.
Arrange 2 raisins for eyes, 1 candy for nose and 2 almonds for ears on narrow end of each pear half to make rabbit face.
Place 2 tablespoons cottage cheese at opposite end of each pear half for tail.
Substitution: No cottage cheese? A regular-size marshmallow thats cut in half looks just like a bunnys tail.
