    Pumpkin Ravioli!!

    Autumn is my favorite part of the year. Whether it’s the fact that we are finally through with the HOT months of summer, or the fact that I get to make hearty meals again–I don’t know–but it’s my favorite time of the year!

    My favorite flavor is Pumpkin. I love anything pumpkin. And this recipe was just as yummy sounding as anything I’d ever heard, and it will be made in this house tomorrow evening for dinner. It’s Pumpkin Ravioli, and it’s so easy.

    It’s made using wanton wrappers, pumpkin puree’ and cream cheese. You spoon the mixture into the center of a wanton wrapper, then dip your finger in water and trace around the edge of the wrapper. Then you take a second one and stick it to the bottom one using the water as glue. Then it’s into boiling salt water until the ravioli float–then into a skillet with butter for a quick brown–and onto a paper towel. I would serve these with just a sprinkle of Extra Virgin Olive Oil and salt and pepper with a side of steamed veggies–I can’t wait!

    I’m not sure how my husband feels about pumpkin–so we’ll wait until he’s back at work tomorrow!
